TASTE THE QUALITY -
Consider these four characteristics when tasting your coffee.
AROMA - This is the reason people love to walk into a specialty coffee store. It's that wonderful, seductive fragrance that is released when fresh, specialty coffee beans are ground and brewed.
ACIDITY - This quality is very important when tasting. Don't confuse acidity with bitterness. Coffee is only bitter when either too much water is run through too little coffee, or if the blend you are tasting is a dark roast. Some bitterness is also from the presence of caffeine. In coffee terms, acidity is a highly desirable quality. All good coffees have some acidity, from the low (smooth) to the high (lively) range.
BODY - Body refers to the weight and feel of the coffee on the tasters tongue. This weight can range from a light or medium, to very full.
FLAVOR - This attribute encompasses the total impression of aroma, acidity, and body. You may hear people refer to the flavor they experience as having specific qualities such as bold, mild, spicy, nutty, or chocolaty.
